Michelin Guide Seolleongtang in Seoul

My earliest memories of take out aren’t McDonalds or KFC, they’re of styrofoam tubs of savory seolleongtang (설렁탕), or ox bone soup. And ever since, it’s literally been my favorite Korean dish.

Just up the street from Starfield Library is Oegojip Seolleongtang (외고집설렁탕), a Michelin Guide restaurant that offers a delicious bowl of seolleongtang for 13,000 KRW. You can pay a bit extra for premium cuts of meat, but if you’re purists like us, the standard bowl is perfectly fine.

Seolleongtang is traditionally slow-cooked over the course of hours in huge tubs on low-heat. The broth ends up looking like a milky, off-white color with a deep and rich flavor. Traditionally, the broth is served in burning hot stone bowls with noodles, thin slices of beef and chopped green onions. And if that were the end of it, it’d be enough. But seolleongtang is traditionally served with crunchy kimchi and sweetened radish kimchi. Delicious.

Pro tip: the seolleongtang at Waygojip is served garnished, but not seasoned. That means there are chopped green onions in the bowl, but it still requires salt and pepper to taste. This is absolutely normal and how the dish is supposed to be served.

While a lot of travelers look to gomtang or samgyetang to warm their winter bones (and rightfully so), we always find ourselves craving a bowl of seolleongtang every winter. And summer. Autumn is great, too. Really, just any time. If you haven’t tried it yet, this is a good place to start.
